Veggie Packed Festive Feast

I’ve put together this Festive Feast packed with yummy flavours and lots of veggies! Including a tofu wreath, orange & maple butternut squash with sprouts and festive braised red cabbage ? Using my new Ninja Foodi StaySharp Knife Block with Integrated Sharpener and Ninja Foodi MAX Dual Zone Air Fryer Here’s how to make it:

Festive Tofu Wreath (serves 8-10)
1/2 onion, finely chopped
4 garlic cloves, finely chopped
150g mushrooms, finely chopped
1 large carrot, peeled and chopped
280g firm tofu, broken up into small chunks
2 tbsp soy sauce
1 tbsp Dijon mustard
2 tbsp tomato purée
1 tbsp lemon juice
5 sage leaves, finely chopped
2 tsp fresh thyme
A handful of dried cranberries
Salt & pepper to taste
375g ready rolled short crust pastry

Method

  • Preheat your oven to 200C/180C fan
  • Heat 1 tbsp olive oil in a large pan and sauté the onions for 5 minutes.
  • Use the Ninja knives to chop the carrots, mushrooms, garlic and tofu and then add them to the pan and cook for another 5 minutes, then add in the remaining ingredients. Cover and cook on a medium heat for 10-15 minutes. Leave to cool completely before putting together your wreath (otherwise the pastry will melt and fall apart while handling).
  • Roll out the ready rolled short crust pastry, then place the filling in the center third of the pastry, leaving a third of the pasty clear on either side. Start rolling the pastry from one wide side to the other to cover the filling, then bring one side of the pastry around to form a circle. Press the two ends together to seal.
  • Use a Ninja knife (sharpened with the Integrated Sharpener) to make cuts across the top to allow steam to escape.
  • Optional – brush the top with egg wash or dairy-free milk to give it a beautiful golden colour.
  • Bake in the middle of the oven for 35 minutes.

Orange & Maple Butternut Squash & Brussels Sprouts (using Ninja Foodi MAX Dual Zone Air Fryer)
1/2 butternut squash, chopped into small cubes
500g brussels sprouts, trimmed and halved
2 tbsp olive oil
¼ cup dried cranberries
¼ cup toasted pecans
2 tbsp orange juice
Zest of 1 orange
1 tbsp maple syrup

Method

  • Insert a Crisper Plate in both drawers of the Ninja Foodi MAX Dual Zone Air Fryer.
  • Add the butternut squash cubes into a bowl and drizzle with olive oil and a sprinkle of salt & pepper, then transfer to Zone 1 drawer, turn the dial to AIR FRY, set the temperature to 180C and the time to 20 minutes.
  • Add the sprouts to the same bowl you used for the squash, then drizzle with olive oil and a sprinkle of salt & pepper. Place into Zone 2 drawer, turn the dial to AIR FRY, then set the temperature to 180C and the time to 10 minutes. Press the dial to begin cooking.
  • After 10 minutes, give both drawers a shake. Once the time is over check both drawers and increase the cooking time if needed.
  • Add both the squash and sprouts to a bowl, and add the remaining ingredients. Mix well to combine.

Braised Red Cabbage (using Ninja Foodi MAX Dual Zone Air Fryer)
1 tbsp olive oil
1 red cabbage, thinly sliced
1/2 onion, finely chopped
Juice of 2 oranges
Zest of 1 orange
1 tbsp maple syrup
60ml apple cider vinegar
2 tsp cinnamon
Pinch of salt

  • Heat 1 tbsp olive oil in a large pan, then add in all the ingredients and mix well.
  • Cover and cook over a low-medium heat for an hour, checking on it every 15 minutes or so.
