Delicious oaty squares that can be enjoyed as a snack, healthier dessert or even a handy on-the-go breakfast. These vegan no-bake flapjacks are so easy to make and super convenient to have in the fridge for when you need a quick pick-me-up.
With it being January and Veganuary, vegan food and recipes are everywhere! Every year more and more plant-based products are being released into the market, which is amazing! Anything that encourages us to eat more plants has to be a good thing. However, just because something is vegan doesn’t mean it’s inherently healthy. The problem with a lot of shop bought snacks, including vegan snacks, is that they tend to be filled with sugar not much in terms of nutrition. That’s why I always think that, time allowing, making your own snacks and treats is so much better, tastier and more nutritious.
Although flapjacks are usually baked, you can make a no-bake version that’s just as tasty and saves a lot of time. I made these flapjacks with plain rolled oats, peanut butter, pistachios (any nuts/seeds will also work), dried cherries (any dried fruit will also work) and a little bit of sweetener to make them taste amazing, but also help bind them together since we’re not baking them.

I also used their oats and their amazing vegan alternative to honey. I love it because it actually tastes like honey and has a very thick and sticky texture (again just like honey), making it perfect for this recipe as it helps hold everything together.

Vegan No-bake Flapjack
Makes 16
Ingredients
230g (2 cup) KoRo rolled oats
165g (1 cup) KoRo cherries
130g (1 cup) KoRo pistachios
2 tsp cinnamon
1/4 tsp salt
140g (1/2 cup) peanut butter
60ml (1/2 cup) KoRo vegan honey alternative
60g (1/4 cup) coconut oil, melted
Optional – drizzle of dark chocolate
Method
Start off by dry toasting your oats in a large pan for around 5 minutes over a low-medium heat.
Transfer into a large bowl along with the rest of the ingredients. Mix well until everything is evenly combined.
Press into a square 8×8 inch tin lined with baking paper.
Refrigerate for 2 hours, then slice into squares. You have the option of drizzling some dark chocolate on top.
Store in the fridge in an air-tight container for up to 4 days.
